Sara's "O" Salsa

Okay, Dish Towel, here is that salsa I promised!

First, it is a completely malleable recipe.  AKA you can change it up as you like it.

2 avocados
1 large tomato (you can seed it if you like)
1 bunch cilantro, chopped (if you do it without the stems, it's less bitter, but takes longer)
3 cans of beans (kidney, pinto, garbanzo, black, etc. whatever you like), drained
1 can corn, drained
1/2 cup some type of dressing like italian, sun dried tomato vinaigrette, whatever you think you'd like
lemon and lime juice (to taste) I like more lime and less lemon
1 bunch green onion (I like putting red onion as well or instead), chopped
Salt and pepper to taste

I like to rinse the beans and corn in a colander to drain them well.  Mix all ingredients in LARGE bowl.  It makes a ton of delicious goodness.  :D

Low Carb Breakfast

So, this whole low-carb diet thing is awesome. 

And by awesome I mean annoying.

And by annoying I mean super difficult to eat food.

Because I love pasta
and bread
and fruit
and chocolate
and everything else that is good and yummy in this world.

BUT--
I did find a way to make a few yummy things.

Ultimate Breakfast Toast
Toast a slice of Bread (Sara Lee's 45 calorie wheat bread has 9 carbs for 2 slices!  way good!)
put sliced hard-boiled egg on top
put sliced tomato on top of that
and sliced avocado on top of that
and a slice of provolone cheese on top of that

Put it in the broiler until the cheese gets bubbly brown-like and then remove.
It is super yummy. 
You could also put bacon, ham, sausage, or something of the like on it. 
Either way, it is like 15 carbs for the whole thing when you do 2 slices of the sara lee bread even if you add meat.  I am allowed 30 at breakfast, so this is way good.  Cuz then I can eat some 1/2 cup raspberries and a glass of milk and I'm at 30 and full.
And it's not a salad!
It is apparently called a california melt, but I add egg to mine.  :)

Jello cake, Jello cake, Jello cake, I like youuuu!!!

Okay!!! I am posting yet another one! Wonder of wonders!!

JELLO CAKE!!!



I don't like cake. I don't like jello. But I LOOOOOOVE jello cake!!! It's one of those weird anomalies.


Here is how you do:

Bake a cake....I like lemon cake from a box.

Then when it has cooled poke holes in it with a tooth pick.

Then poor Jello (the heated stuff that has not yet cooled) into the holy cake.

Then put it in the fridge to cool as you would for jello.

In a few hours put whip cream on the top for frosting if you want to and eat!!!!

Ok All. Listen up.




Okay. You all know that I am not a strong advocate of cooking or baking. So if I take the trouble of making an item that has more than one ingrediants you know it has something. I made it twice. Yep. It's amazing.  Sponge can vouch for the amazingness and so can Mommy Twoder and Minnie Twoder and Twoder Pops.

Ok. I love these. Plus I wanted to illustrate to Lunch Pale that a muffin can still be a muffin with a glaze on top. (yes I know that discussion is a month old! ;D)

Raspberry-Filled Poppy Seed Muffins

2 1/4 cup flour
1 1/4 cup sugar
2 tsp baking powder
1/4 teaspoon salt
1/8 tsp baking soda
3 eggs
1/2 cup vegetable oil
1/2 cup buttermilk
3/4 cup chopped pecans (i like to leave these out.)
2 tablespoons grated lemon peel
2 tsp poppy seed
3 tablespoons seedless raspberry seedless raspberry preserves

Glaze:
3/4 cup confectioners sugar
1/4 cup lemon juice

-In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, whisk the eggs, oil and buttermilk. Stir into dry ingredients just until moistened. Fold in the pecans, lemon peel and poppy seed.

-Fill greased or paper-lined muffin cups with a rounded tablespoonful of batter. Drop 1/2 tsp of preserves in the center of each, top with remaining batter.

-Bake at 350 degrees for 15-20 min or until a toothpick comes out clean. Combine glaze ingredients. Poke holes in warm muffins, drizzle with glaze. Cool for 5 min before removing from pans to wire racks. Serve warm.
