Yes, I will post it as soon as I find it.  I think the one you are thinking of is "Sarah's O Salsa".  It has avocado, corn, beans, cilantro, lime juice, lemon juice, and maybe a few other things.  Does that sound right?

Chicken Broccoli Ricer Cheeser

Okay, so Mike and I made this the other day, and well, it sucked.  I have been making it for maybe 10 years and eating it for 20, but only twice have I not enjoyed it, this last week being one of those times.  So, I will have little notes indicating how to make it the best.


Ingredients:
Cooked Rice (I would say maybe 2 cups per person, and if there's leftovers, they heat up really well) (also, use freshly cooked rice rather than cooked & chilled rice)
Cream of Chicken Soup (one can for every 4 cups of cooked rice.  use the full-fat kind, it makes a big difference.  You can also use Cream of Celery, Cream of Mushroom, etc. )
Chicken (I usually leave this out because it takes extra time, but it does make it more hearty.  Use canned or diced chicken)
Broccoli (It tastes better if you use fresh broccoli that has been steamed, but a quick alternative is to use frozen chopped broccoli)
Cheese (Cheddar tastes best because it has a stronger flavor than say, colby jack or swiss or something)

How to:
1. Preheat the oven to 350 degrees.

2. Layer the ingredients in a greased glass pan.  I like to put broccoli on the bottom, then some rice, cheese, and half the soup.  If I put chicken in it, I do it in the middle.  Then more rice, soup, and then top it with cheese.

3. Cook in the oven until heated all the way through.  If the rice was just barely made/soup heated up, it should take about 25-30 minutes to get the cheese all bubbly.  If it was in the fridge, I would give yourself maybe an hour.



I like this recipe because it has 5 ingredients, you typically would have the ingredients on hand, and it is way easy.  You can prepare it ahead of time or just right before you need to eat.

Where Mike and I ran into issues this last week was that we used the fat free chicken soup and colby jack cheese.  It was bland and blander.  Plus, we used cold rice and then refrigerated it, but didn't cook it long enough, so it was luke-warm.  It really is an easy recipe as long as you stay away from those blunders.

Do you have any suggestions on variations of this meal?  I thought maybe using the frozen cubed potato instead of rice may make it good.  Or cream of asparagus. . . idk.  Let me know what you think!

Fish Tacos With Peach Salsa

Okay, so I read about this in Disney's Family Magazine one day.  It sounds really yummy.  I am thinking I may just use tilapia, grill it up and not worry about breading it.  Plus, leaving out the lime zest because it's too much work  :D
The peach salsa is what really looked good.  The fish is just a bonus to make it a meal.  It's also really low-calorie.  No added fat if you leave the fish just plain, and you bake it without fats.  :D
I can't wait to try it!



Hands-on Time: 30 minutes
Total Time: 45 minutes
Serves: 4
Ingredients
 
FOR THE FISH:
  • 2 tablespoons water
  • 2 large eggs, beaten
  • ½ cup flour
  • 2 cups panko
  • 1 pound catfish fillets sliced into 1- by 3-inch strips
  • Salt and pepper
  • 8 to 10 corn tortillas, warmed
  • Shredded lettuce
  • Low-fat sour cream or mayonnaise (optional)
  FOR THE SALSA:
  • 1 (16-ounce) package frozen segmented peaches, chopped and thawed
  • ¼ cup finely chopped red onion
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon finely chopped jalapeƱo pepper
  • 2 tablespoons chopped fresh cilantro
  • ¼ teaspoon salt
Instructions
  1. Heat the oven to 450°. Line a rimmed baking sheet with foil. Place an ovenproof cooling rack on the baking sheet and coat the rack with nonstick cooking spray.
  2. Stir together the water and the beaten eggs. Place the flour, the egg mixture, and the panko in three separate bowls. Season the catfish with salt and pepper, then dredge each piece first in the flour, then the egg, and finally the panko. Place each coated strip on the prepared rack, leaving a 1-inch space between the pieces. Lightly mist the fish with nonstick cooking spray.
  3. Bake the fish until it's lightly browned, 10 to 12 minutes. Meanwhile, in a medium bowl, stir together the salsa ingredients.
  4. Prepare each taco by placing two or three strips of fish in a tortilla. Top with the Peach Salsa, the shredded lettuce, and if you like, low-fat sour cream or mayonnaise.

    Corn & Potato Chowder

    Mike and I like this recipe.  We have it with a side salad or rolls.  WAY easy for any day you just want to set it and forget it.  :D





    Ingredients:
    • 6 slices of crisp-cooked bacon, crumbled
    • 2 1/2 to 3 cups diced potatoes
    • 1/2 cup chopped onions
    • 1 (16 oz.) can cream corn
    • 3 cups chicken broth
    • 1 tsp. salt
    • 1/4 tsp. pepper
    • 1 can (12oz) evaporated milk


    Preparation:
    Place all ingredients except milk in slow cooker. Cover and cook on LOW for 8 to 10 hours. Add milk and cook, covered, for 30 to 45 minutes longer.
    Makes 6 to 8 servings.




    And for those who prefer to not eat bacon, just leave it out or put in something like ham pieces.  You'll love this.  Especially because it is SO easy! Try putting green onion or cheese on top.  Mmmmm. . .

    So, I had this fantastic (according to me) idea. Since we are all now apart and either married or living on our own, trying new things, I thought it would be really fun to have a place we could all share recipes we have tried and loved.
    I LOVE trying new recipes, even though Mike isn't as keen on certain foods/flavors. But, he is growing and trying new things every day.
    Plus, if someone has something utterly delicious, it's only fair they share. :D
